Clover Club

Ingredients:

  • 1½ oz gin
  • ½ oz lemon juice
  • 3 tbsp raspberry syrup
  • ½ oz egg whites
  • to garnish raspberries

Directions:

Yields: 1 cocktail

Raspberry Syrup Ingredients:
Makes ~20 oz

  • ½ cup raspberries
  • ½ cup sugar
  • ¼ cup water

Make the raspberry syrup: Combine the raspberries and sugar in a shaker and muddle. Allow to rest for 30 minutes. After resting, add the water and stir until the sugar is dissolved. Strain through a fine sieve and refrigerate until needed.

Make the cocktail: Combine all the cocktail ingredients in a shaker with no ice, and dry shake for 20 seconds. Then, add ice and shake for an additional 20 seconds. Strain into a chilled glass and garnish with fresh raspberries.
