Tequila Lemon Mousse
Ingredients:
- 1 tbsp tequila
- 4 pieces graham crackers
- 1½ cups heavy cream (divided)
- 3 tbsp powdered sugar, sifted (divided)
- 1 tsp vanilla extract
- pinch salt
- 1 tbsp fresh lemon juice
- ½ cup lemon curd
- For garnish: lemon zest & fresh mint
Directions:
Yields: 4 servings
Add the graham crackers to a ziplock bag. Crush them into a fine crumb with a rolling pin, then set aside.
In a small bowl, combine ½ cup heavy cream, 1 tbsp powdered sugar, vanilla extract, and a pinch of salt. Whisk by hand until soft peaks form. Refrigerate until you’re ready to garnish.
In the bowl of a stand mixer, combine lemon juice, lemon curd, tequila, remaining 2 tbsp of powdered sugar, and a pinch of salt. Whisk for 30 seconds or until combined. Transfer the mixture to a medium-sized bowl.
Add the remaining cup of heavy cream to the stand mixer and beat on medium speed for 2 minutes or until soft peaks form, scraping down the bowl halfway through. Gently fold half of this mixture into the lemon mixture until combined. Add the remainder of the cream mixture and fold to combine.
To assemble, evenly divide the graham crackers between 4 cups or jars. Then add a scoop of lemon mousse to each serving. Garnish with whipped cream, lemon zest, and fresh mint.
